How to Put the Top on an Apple Pie
Step One - Make the Bottom of a Pie
- Using your favorite pie crust recipe, make slightly-less than TWICE the amount of pie crust dough to fill a 9 - 12 inch pie dish.
- Put slightly-less than half on a piece of wax paper and cover it with a towel.
- Put the rest of it in the pie dish!
- Get seven apples (more or less depending on the size of the apples).
- Peel, core, and slice them to your preferred thickness (or thinness, depending on how you look at things).
- Go to Step 2!
- 15-20 cups apple slices, slice as thin as you prefer
- 2 1/4 teaspoon Cinnamon, ground
- 1/4 cup Lemon juice, more or less to flavor
- 4 cups White sugar, Add more depending on sweetness of apples
- 1/4 teaspoon Nutmeg, or less
- 1/2 - 1 teaspoon Salt
- 1/4 cup All-Purpose Flour
- 1/2 cup Brown Sugar, packed

My Wife's Apple Pie Filling
- NOTE: You can always ADD more ingredients but you can never SUBTRACT them. Err on the side of caution (and add more ingredients in the last step--to your preferred taste).
- NOTE: Use the least amount of water possible while being sure to get a coating on all the apple slices by the last step.
- Put apples in a large bowl. The one in the picture to the right is what you are looking for.
- Mix flour, brown sugar, cinnamon, and nutmeg together in a small bowl.
- Re-visit warning in Step 2. Pour the lemon juice and a tiny bit of water over the apples.
- Gently push the apples around in the excess gooey stickiness that is forming in the bottom of the bowl. Less touching is best.
- Pour the sugar over the apples. Repeat Step 6. Make sure all the slices have a coating of sugar.
- Dump the brown sugar mixture over the apples, attempting to 'sprinkle' as much as brown sugar will allow. Repeat Step 6.
- Adjust flavor to your preferences by adding extremely small amounts of the ingredients listed. In fact, skip this step all together.
Step Three - Flatten out the Dough
Flatten out the dough for the top. Even if you have flattened it once, it needs to be really flat and of an even thickness.
Remember to use flour on your rolling pin, so the dough doesn't stick to it.
Once it is flattened out, you need to cut the little decorative vent hole in the very center of the part that you have flattened out.
The pattern is up to you but my wife uses a three-leaf pattern for the perfect amount of venting--and because it looks the best!
Step Four - Move Crust from Counter to Top of Pie
The next step gets kind of technical, so pay attention.
- Sprinkle some flour on your rolling pin.
- Carefully roll the crust onto the rolling pin until the whole thing is wrapped around the rolling pin like a really weird burrito. See picture!
- Place the bottom of the pie in the center of your counter.
- Place the loose edge of the crust on the rolling pin well past the edge of the bottom of the pie.
- Unroll the pie crust so that it drapes over the bottom of the pie, covering it completely all the way around the pie plate.
Step Five - Cutting and Pinching the Edge
- Do nothing yet. Read this step's warning first. Be sure to leave enough excess attached to the top crust that you can pinch it together with the part of the bottom crust that is sticking up. Now, you can do something again.
- Trim the excess dough off from around the pie. Leave enough dough to attach the top to the bottom.
- Work your way carefully around the edge of the pie, pinching the edge of the top crust to the edge of the bottom crust. Create a little wall of dough circling the edge of the pan. See the picture.
- Be sure that the pie is perfectly sealed! Or as close as necessary for pie.

Step Six - Cook the Pie
There is an extra twenty (20) minutes added to the Prep Time above. That is the time between taking it out of the oven and eating it.
In other words, let the pie stand for twenty (20) minutes after taking it out of the oven before slicing it.
